Chicken Piroshki Recipe
Chicken Piroshki is a baked or fried yeast-leavened dough stuffed with Chicken that originated in Russia. This dish is similar to dumplings and is served in different countries with different filling ingredients. Chicken Piroshki Recipe
Step 1
For preparing the dough, mix the yeast, salt, and sugar with half a cup of warm water in a bowl, then cover the bowl and place it in a relatively warm environment for 10 minutes to proof.

Then add eggs, a pinch of salt, and liquid oil to the yeast and mix until the ingredients are uniform.
Step 3
Now gradually sift the flour into the bowl and mix well with a spoon or spatula until the dough is slightly sticky. Note that the dough should be somewhat sticky, and adding too much flour will produce a very dry and highly stiff dough.

Now knead the dough for 10 to 12 minutes by hand or 8 to 10 minutes in a mixer until the dough becomes smooth and elastic. Then place the dough in a bowl, cover it with a plastic film, and let it rest in a warm place for an hour.

To prepare piroshki filling, chop the onion into small pieces and sauté it in a suitable pan until it caramelizes gently.

Cut the sausage into small chunks and add it to the onions. Sauté well until it changes color.

Chop the mushrooms and bell pepper and add them to the pan. Sauté the ingredients for a few minutes until the mushroom liquid evaporates and becomes well cooked.

Cut the chicken breast into small bite-size chunks and add them to the pan. Sauté until they change color.

At this stage, gather the ingredients of the pan to a side and add tomato paste and sauté to get darker. Then mix the ingredients. Now grate the garlic clove, or chop it finely, and add it to the pan.

Add salt, black pepper, and turmeric to the pan, mix the ingredients until they are uniform, and sauté for a couple of minutes. Then set the pan aside to cool the ingredients.

After an hour, punch down the dough to release its air bubbles. Lightly flour your surface and tip the dough out. Then roll out the dough to half a centimeter thickness.

Use a round cookie cutter or a drinking glass to cut the dough into a rounded shape. Then pile the filling mixture on the dough, and top it with a sprinkle of mozzarella. Then brush some drops of water on the edges of the dough and place another dough on them. Now start from one end and close the dough by pressing its edge with your fingers or fork. Fill two or three centimeters of a deep pan with oil and bring the oil to 180 Celsius or 350 Fahrenheit. Then fry the piroshki until golden brown. Once the piroshki are crispy outside, put them on a rack so they can drain the excess oil.
