Baba ganoush

Baba ganoush

Baba ghanoush, also spelled baba ghanouj or baba ganoush, is a Lebanese dip consisting of roasted eggplant, various seasonings, and tahini. This dish is often served as an appetizer or the main meal. It is so easy to make and has a silky texture and smoky flavor, making it a must-try summer dip! Stay with Takrecipe to learn how to make Baba ghanoush.

Ingredients for four people

  • Medium eggplant 6
  • Tahini 2 tbsp
  • Garlic 6
  • Scallions 4
  • Olive oil 100 g
  • Lemon juice 12
  • Salt 1 tsp
  • Black pepper ½ tsp
  • Ground cumin (optional) ½ tsp

Grill the Eggplants

Wash the eggplants, and grill them unpeeled on a stove or charcoal grill until they are thoroughly cooked and soft. If you do not like the smoky taste of eggplant, you can wrap eggplants in foil and roast them in an oven until completely tender.

Soak and Peel

Fill half of a large container with cold water and soak the grilled eggplants for 5 minutes. Then remove the eggplants from the water and peel them easily. After peeling the eggplants, put them in a colander for a few minutes to drain excess water.

Blend the Mixture

Next, put the eggplants with tahini, garlic, scallions, olive oil, lemon juice, ground cumin, salt, and black pepper into the blender or a food processor. Blend them well to get a pale and creamy mixture.

Check and Serve

Now check the seasoning and add more if needed. That is it! Your Baba ghanoush is ready now. Transfer it to a serving bowl, garnish it with parsley leaves, and serve it with pita bread. Enjoy your meal!
