Garlic Soup Recipe

Step 1

Peel and wash the onions and finely dice them. Then put a pot on heat and coat its bottom with two tablespoons of oil. Add the onions and sauté them until they get translucent.

Step 2

Wash and grate the garlic cloves with a fine grater and add them to the pot. Sauté until its aroma is released. Note that garlic cooks quite quickly, so there is no need to sauté it too much. In addition, too much roasting will diminish its vitamin content significantly.

Step 3

Now add the flour and lightly toast it. Once you see or smell the flour starting to brown, add the chicken stock and two cups of warm water to the pot. Bring the water to a boil and turn the heat to low.

Add white vinegar, salt, and black pepper to the soup, give it a good stir, and put the lid on. You can also use white wine instead of vinegar. Let the soup cook for about 45 minutes to an hour to thicken.

Step 5

After the soup is done, add the yolk and whisk it well until it gets uniform with the soup. Now take the soup off the heat and add the chopped parsley. In the end, pour the soup into the desired dish, slice the toasted bread into small pieces and add them to the soup. Serve this healthy soup immediately, and enjoy!
