Ghalieh Meygoo Recipe | Persian Shrimp Stew

|Tomato paste||1 tbsp|

|Black pepper||½ tsp|

Peel and wash one of the onions and dice them finely. Put a pan on the heat, add a tablespoon of oil, and sauté the onion until they get caramelized gently. Then add turmeric to the pan and sauté until it gets mixed with the onion.
Peel and wash shrimps and add them with ginger powder, coriander, cumin, and black pepper to the pan, and sauté the ingredients for about two to three minutes until the shrimps are slightly cooked. Then remove the pan from the heat and set them aside.
At this stage, finely dice the remaining onion and sauté it with a bit of oil in a suitable pot until it becomes translucent.
Grate the garlic cloves with a fine grater and add them to the pan. Sauté until the aroma of the garlic is released.
Wash and chop the coriander and fenugreek and add them to the pot. sauté until the color of the vegetable changes and the water in the pan evaporates, then add salt and chili powder and sauté for a minute.
Mix the tamarind with two and a half cups of hot water and stir well until the tamarind dissolves in the water. Then strain the tamarind juice, add it to the pot containing the vegetables, and turn the heat low. Simmer for 10 minutes until it thickens a little.
Now add tomato paste and shrimp mixture to the pot and let it cook for 5 to 10 minutes to reach a nice consistency. You can add a tablespoon of lemon juice if you like. Pour this stew into a bowl and serve it with rice or bread. Try Ghalieh Meygoo like this and enjoy.
