Zereshk Polo Ba Morgh Recipe | Barberry Rice With Chicken
Zereshk Polo Ba Morgh is one of Iran’s original and ancient foods. This food combines rice, chicken, barberry, and saffron.
|Ingredients for four people|
|basmati rice||2 cups|
|Chicken breast or thigh||Four pieces|
|Dried barberry||4 tbsp|
|tomato paste||2 tbsp|
|Lemon juice||1 tbsp|
|Ground saffron||¼ tsp|
|Rose water (optional)||1 tsp|
|Black pepper||½ tsp|
|Vegetable oil||6 tbsp|
Zereshk Polo Ba Morgh Instructions
Heat a pan and add two tablespoons of vegetable oil. Add the chicken pieces and fry well on both sides until golden.
Take the chicken pieces from the pan after frying, peel the onion and garlic and chop them finely. Add a spoonful of oil to the pan along with the chopped onion.
sauté the onion for 3 minutes. Add the garlic and sauté for another minute. Add turmeric and tomato paste and sauté for another five minutes.
Add 3 cups of water, one teaspoon of salt, and black pepper powder and stir. After the water boils, reduce the heat and add the chicken pieces.
It takes about an hour and 30 minutes to cook the chicken. Wash and dry the barberry. Pour the rice into a bowl, and wash with cold water.
Fill a medium pot halfway with water and place over high heat until the water boils. Add two teaspoons of salt to the boiling water.
Add the rice to the boiling water and stir until the rice grains do not stick together. Wait for 6 to 10 minutes until the rice grains are soft. (Cooking time depends on the type of rice)
First, press a few rice grains between your fingers to test the rice. If the rice grains are soft around and hard in the middle, they are ready to be rinsed.
Put the rice in a colander and rinse with cold water. Pour the remaining oil into the bottom of the pot, then pour the rice into the pot with a spatula.
Put the lid on the pot, put it on the low heat of the heat diffuser, then put the pot on the heat diffuser and let the rice cook for 35 to 45 minutes.
In the last 10 minutes of cooking the chicken, add rose water, lemon juice, Sugar, and Ground saffron to the pot containing the chicken.
Pour the butter into a small pan and heat until it melts, then add the barberry and sauté for a minute.
After the food is ready, pour the rice into the dish you want and decorate with barberry, then put the chicken in a bowl and serve it next to the rice.
