Small pumpkin½
Chicken stock4 cup
Medium carrot2
Large potato1
Pearl barley½ cup
Garlic powder¼ tsp
Heavy cream1 tbsp
Salt1 tsp (or to taste)
Black pepper½ tsp (or to taste)

Pumpkin Soup Recipe

Step 1

Wash the pearl barley a couple of times until it is dust-free. Then fill a suitable bowl with water, add the barley, and let them soak for an hour.

Step 2

Cut the pumpkin into slices and scrape the seeds out. Add the pumpkin into a suitable pot with two cups of water, put the pot on medium heat, and let the pumpkin simmer to become tender. After the pumpkin is cooked, peel its skin off and mash it with a handheld blender or a food processor to turn it into a puree.

Then, pour the pureed pumpkin with the chicken stock, soaked barley, and garlic powder into a large and suitable pot.

Wash and peel the carrots and the potato and chop them into small chunks. Add them to the pot and place them on a gentle heat.

Let the soup cook for an hour. Then pour it into a stand blender or mixer and mix them until smooth (or you can mix it with a handheld blender).
