Spinach Cutlet Recipe

Step 1

Scrub and remove the eyes of the potatoes. Then add them with 2 cups of water into a suitable pot and put it on the heat to bring the water to a boil. Let it simmer for 10 minutes and then rinse the half-cooked potatoes and peel them.

Now grate the potatoes and set them aside to cool down. Next, after the potatoes have cooled down, add the eggs, brewed saffron, salt, ground black pepper, and turmeric to the potatoes.

Wash and rinse the spinach and chop them finely. Then add them to the potatoes and mix the ingredients well until they are completely uniform. You can add barberries to the mixture if you get a tart burst of flavor as you bite the cutlet.

Put a pan on the heat and add two to three tablespoons of oil to coat the bottom of the pan. Once the oil is hot, scoop about a one-fourth cup of the mixture onto the pan. You can pour the mixture into the pan all at once to get a large uniform cutlet.
