Eggplant Caviar Recipe
Step 1
Roast the eggplant on a stove or grill until they are thoroughly soft and the skin blisters. You can also wrap them in foil and roast them in an oven until completely tender if you do not like the smoky taste of eggplant.

Let the eggplants cool down. Then peel and purée them with a blender or a food processor. You can also chop the eggplants until they form a rough purée.

Dice the onion finely and sauté them in a pan coated with oil until translucent. Then grate the garlic and add it to the pan. Sauté the garlic until its aroma is released.

Next, chop the bell pepper into small pieces, add it to the pan, and sauté it until it gets soft.

Peel the tomatoes, grate them, and add them to the pan. Once it starts sizzling, add tomato paste and sauté the ingredients well until they are completely uniform.

Now add the puréed eggplants and stir well to incorporate the ingredients. Then add lemon juice, salt, black pepper, and turmeric to the pan and mix the ingredients well.
