Persian Mini Meatballs Recipe | Koofteh Ghelgheli
Koofteh is one of the most traditional and tasty dishes in Iranian cuisine and is made with various recipes. Today at Tak Recipe, we want to share the Koofteh Ghelgheli recipe, which means tiny meatballs. This kind of meatball goes well with stew, rice, or sandwiches and is so easy to make. you just need to mix the minced meat with some ingredients and fry it. Persian Mini Meatballs Recipe
Grate one of the onions with a fine grater, squeeze the juice out, and add the grated onion into a large mixing bowl.
Add minced meat to the bowl along with some salt, black pepper, turmeric, and egg, and mix them with the onion with your hand to get a smooth texture.
Now you can add chickpea flour. Adding chickpea flour is only for the consistency of the meatballs, so if the meatball mixture is too loose, you need to add some chickpea flour to firm it up. Be careful not to add too much chickpea flour to the meatballs because it will make them dry and hard. If your meatball mixture is too hard, you can adjust it with a bit of water.
Take a small amount of meat mixture, about the size of a walnut, roll it between the palms of your hands, and shape it into little balls. You can also make chicken meatballs by changing the minced beef with ground chicken meat.
After the meatballs are ready, put a small deep pan on heat and pour some oil to cover the pan. You can also deep-fry the meatballs and pour enough oil so that the meatballs submerge in the oil.
Once the oil is hot, place meatballs one at a time in the pan and turn them to sauté all the sides, and cook through. This may take about 10 minutes.
To prepare the meatball sauce, peel the tomatoes and dice them finely. Then pour a little oil into a suitable pan and put it on the heat until the oil is hot.
Cut the remaining onion into large slices and sauté it in oil until it becomes translucent. Then add tomato paste to the pan and sauté to get darker.
After the tomato paste is cooked, add diced tomatoes to the pan along with some salt, black pepper, and turmeric. In the end, add half a cup of hot water to the pan and let the sauce thicken.
At this stage, gently place the meatballs in the sauce and let them marinate on low heat. You can serve the meatballs after the water in the pan evaporates. Your mini meatballs are ready now. They go well with Persian-style rice and stews. We hope you give it a try and like it.
