Mushroom Cutlet Recipe

Wash and scrub the potatoes, then place them in a pot filled with two cups of water. Dissolve a pinch of salt in water, put the pot on high heat for 15 to 20 minutes, and let the potatoes boil. Potatoes are ready when they are fork tender.
Then peel the potatoes, grate them with a fine grater or a potato ricer, and put them in a large mixing bowl.
Cut the mushrooms into small slices and sauté them with a bit of oil until their liquid evaporates and becomes well cooked. In order to prevent the mushrooms from turning black, add one tablespoon of lemon juice while cooking. Then add them to the potatoes.
Grate the onion with a fine grater. Then squeeze the extra juice out of the onion and add it to the potatoes.
Wash and chop the parsley finely and add it to the other ingredients. Set them aside to cool down.
Now crack the eggs into a small bowl. Then add flour, salt, ground black pepper, and turmeric to the egg and whisk them well until they are completely uniform.
Now add the egg mixture to the other ingredients and mix them well until they are uniform. You should note that the mushrooms and potatoes must be completely cool when you want to add the eggs.
Place a suitable pan on low heat and pour some oil into the pan. Once the oil is hot, take a small amount of the mixture and shape it with your hands into a round or oval shape, then put it in the pan. After one side of the cutlets is cooked and you see light browning on the edges, turn them to cook the other side.
