Healthy Broccoli Soup Recipe | Easy and Delicious

|All-purpose flour||2 tbsp|
|Chicken stock||1 cup|
|Cheddar cheese||60 g|
|Salt||½ tsp (or to taste)|
|Black pepper||⅓ tsp (or to taste)|
Broccoli Soup Recipe
Peel and wash the onions and dice them finely. Put a pan on medium heat and add a tablespoon of butter. Let the butter melt, and swirl it around the pan to coat the bottom. Then add the chopped onion and sauté them until caramelized. Then remove them from the pan and set them aside.
Now add the remaining butter to a pot and let them melt on medium heat. Then add the flour to the butter and stir it gently so it is lightly toasted.
Now pour the chicken stock into the pot, lower the heat to medium, put the lid on, and let it simmer for about 20 minutes. If you want to make this soup vegetarian, you can substitute chicken stock with vegetable broth.
Peel the carrot and chop them into small pieces. Do the same for the broccoli; we recommend choosing dark green broccoli with firm stems.
After 20 minutes of simmering the broth, add the chopped carrots, broccoli, and sautéed onion to the pot and let them cook for 20 minutes until the broccoli is tender.
Once the soup reaches a nice thickness, add salt and black pepper, pour them into the blender or a food processor, and process them until smooth. You can also purée them with an immersion blender.
Then bring the puréed soup back to the pot, turn the heat to medium and add the cheddar cheese to the pot. Now add a pinch of nutmeg and let the soup cook for a couple of minutes to melt the cheese. Your broccoli soup is ready now. Pour it into a bowl and serve it immediately. Enjoy!
This soup is dairy-free, but if you like, you can heat half a heavy cup of milk until thick and bubbly. Then add it to the soup and combine it with a little stirring.
