Dande Kabab Recipe
Dande Kabab is a delicious dish from Persian cuisine, originally from Kermanshah. Iranians make kabab by skewering ground or lean meat and grilling it on fired-up coals. Dandeh Kabab is almost the same with slightly different; it is made from ribs. This is a fancy but memorable dish, especially when served at family or friends’ gatherings! Today at Takrecipe, we want to share how to prepare this satisfying kabab just like Iranians.

Lamb meat | 300 g |
Tomato paste | 1 tbsp |
Large tomatoes | 2 |
Sour lemon juice | 1 tbsp |
Large onion | 1 |
Brewed saffron | 2 tbsp |
Butter | 50 g |
Salt | To taste |
Black pepper | To taste |
Dande Kabab Recipe
Step 1
Grind the lamb meat coarsely with a meat grinder. Then grate the onion and add it to the minced meat.
Step 2
Next, add salt and black pepper and knead the ingredients with your hands for a few minutes until they become cohesive.
Step 3
Now you need to skewer the ribs. For this purpose, firstly, put the ribs vertically through the skewers. Then place the minced meat next to the ribs, spread it next to the ribs, and pound it with the edge of a knife.
Step 4
One of the most important principles of skewering kebab ribs is to place three wide skewers under the meat. This will prevent the minced meat from falling apart from the ribs.

If you have enough time, put the skewered meat in the refrigerator for a few hours to firm up.

Now light the charcoal, and when they are lit and covered with gray ash, place the Dandeh directly on the heat.

Now, wait a couple of minutes for the minced meat to stick to the skewers you have placed under it, then turn it continuously until it is evenly grilled. You can set an oven rack under the kebabs to prevent them from falling off the skewers.
Step 8
While grilling the ribs, you can prepare the sauce. For this purpose, add butter to a suitable pan and put it on low heat until the butter melts. Then peel and dice the tomatoes and add them to the pan and sauté for a while.
Step 9
Then add tomato paste and sauté it a little until the raw taste of tomato paste is taken. Now add the brewed saffron, lemon juice, salt, and black pepper, and mix the ingredients well.
Step 10
After grilling the ribs, generously brush the sauce on both sides of the kabab, then serve it with bread or rice. We hope you try this delicious dish and enjoy it.

in oven
You can also cook this kabab in the oven. For this purpose, wrap the prepared meat and ribs in foil and place them in a 175 Celsius (or 350 Fahrenheit) oven for one and a half hours to cook. You need to open up the foil in the last 15 minutes to grill the kebab.
