Persian Kabab Hosseini Recipe | Easy and Delicious

|Lamb fat||100 g|
|Tomato paste||1 tbsp|
|Lemon juice||1 tbsp|
|Vegetable oil||4 tbsp|
|Brewed saffron||4 tbsp|

|Meat seasoning||To taste|
Kabab Hosseini Recipe
Cut the lamb meat and fat into small-sized chunks, about two centimeters thick. You can also use beef for this kebab. Then Peel and cut one of the onions into slices.
At this stage, put the onion in a suitable bowl, then add the chopped meat and fat. Next, add salt, black pepper, meat seasoning, oil, and two tablespoons of brewed saffron to the bowl. Then massage them with your hands until they are combined, and the meat gets coated in the marinade.
Cover the meat with a plastic film and let it sit in the fridge for 12 hours. Chilling the mixture will marinate the meat and infuse it with flavor.
Then put the wooden skewers in water so they get wet and do not burn while cooking.
Now peel and wash one of the onions and cut it into small wedges. You can use red onion for this step to give a colorful look to the kebab.
Wash and remove seeds and membranes from the bell pepper. Then cut the bell pepper, similar to the onion, into wedges.
Now you have to do the skewering. Thread the onion, meat, fat, and bell pepper onto the skewer. Continue in the same way until the wooden skewers are filled.
Next, put a suitable pan on low heat and pour some oil to cover its bottom. Then cut the remaining onion into slices and place them on the bottom of the pan. Sauté them for a few minutes until they are translucent.
Wash the tomatoes, cut them into thin slices, and place them on the onions. Then place the skewered meat on them.
To prepare the sauce, put a pan on medium heat and add tomato paste. Once it starts sizzling, add turmeric, salt, and black pepper and let it get darker. Then add two cups of water and a tablespoon of lemon juice and stir until the ingredient become uniform.
Once the sauce starts to simmer, pour it with the remaining brewed saffron on the meat, put the lid on, and let the meat cook through, and the juice evaporates completely. Taste the seasoning in the last 5 minutes and adjust it according to your taste. Your Kabab Hosseini is ready now. Pair them with pepper and vegetables and serve them flatbread.
