Kabab Koobideh in Oven
To make Kabab Koobideh in the oven, grind meat with onions, season, and knead until sticky. Rest in the fridge, then shape into strips. Cook in a preheated oven, brushing with saffron butter. Serve with rice or bread.

Kabab Koobideh in Oven
Step 1: Preparing the Meat
Cut the meat and fat into medium-sized chunks and grind them with a meat grinder. Then mix them and grind them twice. You can also use beef or a mixture of beef and lamb for the kabab.
Step 2: Preparing the Onions
Peel and wash the onions and grate them with a fine grater. Then squeeze the grated onion juice and add them to the ground meat.
Step 3: Seasoning and Kneading
Next, add a pinch of salt and black pepper to the ingredients and knead the meat mixture by hand for 10 minutes until they become sticky and cohesive. Kneading the kebab mixture prevents it from falling apart while cooking.
Step 4: Resting the Mixture
Then cover the bowl with a plastic film and put it in the refrigerator for an hour to rest and help the meat to firm up.
Step 5: Preparing the Oven
Grease the baking tray with olive oil and preheat the oven to 160 Celsius or 325 Fahrenheit for 10 minutes.
Step 6: Molding the Kebabs
Take about 100 grams of the meat mixture or roughly the size of a small tangerine, and mold them in strips of about 2 centimeters in thickness and three to four centimeters in width. Then place them parallel to each other on the baking tray.
Step 7: Alternative Molding Method
You can also spread the mixture uniformly with the palm of your hand on the tray so that it has the same thickness all around the tray. Then cut the meat lengthwise into strips with a knife.
Step 8: Adding Tomatoes (Optional)
Once you have molded the kebabs, you can put some tomatoes on the tray if desired. Now place the tray in the oven and cook it for 20 minutes.
Step 9: Cooking in the Oven
To cook kebabs in the oven, you should turn both the upper and lower heating elements of the oven so that the kebabs are cooked well. If your oven cannot heat the top and the bottom simultaneously, turn the kebabs after ten minutes.
Step 10: Adding Butter and Saffron
Meanwhile, melt the butter in a small pan and mix it with the brewed saffron. Then, generously brush the mixture of butter and saffron on the kebabs to avoid drying and give them a pleasant aroma and color.
Step 11: Final Cooking and Serving
Then place it in the oven and let it cook for 10 to 15 minutes. There you have it. Pair this ground meat kebab with parsley and onion and serve it with rice or bread. Enjoy your meal!

Smoking kabab
If you want your kababs to have a smoky flavor, you can fire up small coal on the stove. Then, while the kebabs are being cooked in the oven, put the lit coals on the tray next to the kebabs, and pour a few drops of oil on it so that it smokes and the kebabs will take the smoky flavor.
