Today at Takrecipe, we are making another authentic dish from Persian cuisine. Mirza Ghasemi was invented in the 19th century by the governor of the northern part of Iran and named after him. This delicious dip is made from roasted eggplants and tomatoes and is an excellent appetizer for your parties. This is an easy recipe, but it can impress everyone. Mirza Ghasemi Recipe
Step 1
The authentic Mirza Ghasemi is prepared by roasting the eggplants. For this purpose, grill the eggplant on a stove or the heat of the fired-up coal until they are thoroughly soft and the skin blisters. If you do not like the smoky flavor, you can simmer them or wrap them in aluminum foil and grill them in an oven.
Step 2
After grilling the eggplants, let them cool, peel and purée them with a blender. You should remove the eggplant’s seeds so that the taste of Mirza Ghasemi does not become bitter at the end. You can also chop the eggplants with a knife until they form a rough purée. Then set them aside.
Step 3
Simmer the tomatoes in a pot filled with water for 5 minutes. Then take the tomatoes out of the water and let them cool down. Then you can peel their skin off easily. Now dice them finely or grate them with a fine garter.
Step 4
Put a suitable pan on medium heat and add two tablespoons of oil to cover it. Then grate the garlic and sauté them for a minute until soft.
Step 5
Add some turmeric to the garlic and sauté it well until it gives a golden hue to the garlic.
Step 6
Now add the eggplants to the pan and sauté it for about 20 minutes. Then add the grated tomatoes to the pan and sauté well until the tomato juice evaporates and you see oil accumulating on the dip’s surface.
Step 7
If you want to improve the taste and color of the Mirza Ghasemi, you can also add one tablespoon of tomato paste at this stage. Sauté the paste until its rawness is taken and gets darker. However, tomato paste is not used in the traditional recipe.
Step 8
Now make a spot on the pan by gathering the ingredients on one side of the pan. Then crack the eggs on the spot, and after they are cooked well, mix them with the other ingredients of Mirza Ghasemi until they get incorporated.
Step 9
Now add a pinch of salt and black pepper to the dip according to your taste and let the Mirza Ghasemi cook. You Mirza Ghasemi is ready now. Transfer it to a plate and serve it with warm bread.
