Mash Polo Recipe
Today at Tak Recipe, we bring you one of the traditional Persian dishes that can be made quickly. Mash polo is a nutritious and comforting pilaf that is easy to make since it only takes a few ingredients. This dish can be prepared vegan or with meat filling. Mash polo is quite similar to Adas polo, and you need to substitute lentils with mung beans. Stay with us to learn how to prepare this delicious dish in your kitchen.

Mash Polo Recipe
Step 1
Firstly, you need to soak the mung beans in a bowl filled with water for a night or at least 8 hours. This lets them puff up and cook better. It would be best if you changed their water two or three times to make them more digestible.
Step 2
You should also soak the rice before cooking, but in contrast to beans, it only needs to be soaked for 30 minutes to two hours.
Step 3
Drain the mung beans with a colander and add them to a pot. Pour two cups of water into the pot and bring the water to a boil. Then lower the heat and let it simmer for about 20 minutes until it becomes soft and cooked. Note not to overcook them since mushy mung beans are not tasty nor appealing to the eyes. Then drain them and set them aside.
Step 4
Peel and coarsely chop the onion, put a pan on the heat and coat its bottom with oil. Then sauté the chopped onions in oil over medium heat until they caramelize gently.
Step 5
Now grate the garlic cloves and add them to the pan. Garlic burns quickly, so sauté them for a few minutes until their aroma is released. Then add salt, black pepper, and turmeric to the pan and sauté to mix them with the ingredients.
Step 6
Now add the mung beans to the pan, sauté them for a few minutes to mix the ingredients, and then turn off the heat and set them aside.
Step 7
Fill a suitable pot halfway with water, put it on heat, and bring the water to a boil. Then add the rice, a tablespoon of salt, and a tablespoon of liquid oil to the pot.
Step 8
After 5 to 10 minutes, depending on the rice, the rice becomes soft outside and uncooked in the center. Now rinse and strain them in a colander to remove the excess salt and water.
Step 9
Now put a pot on heat and add two tablespoons of oil. Heat it for about 10 seconds. Then put a layer of flatbread or sliced potatoes on the bottom. This will prevent the ingredients from sticking to the bottom of the pot and bring you the crispy Tahdig.

Then put a layer of the rice on the Tahdig. Then add the mung beans mixture and the parboiled rice layer by layer. Note that the last layer should be rice. Then shape it into a pyramid and make some holes with the handle of your spoon so the rice steam well.
Step 11
Now put the lid on and put the pot over medium heat. Once you see steam rising from the rice, wrap the lid with a kitchen towel, put it on firmly, turn the heat low, and let it cook for about 45 to 50 minutes.
Step 12
In the meantime, you can prepare the meatballs if you like to have meat in your meal. Mix the minced meat, salt, black pepper, and turmeric with each other and knead them well with your hand to get a smooth texture.
Step 13
You can also grate a small onion and mix it with the meat mixture to make the meatballs more tender and tastier. You should drain the juice from the grated onion to prevent the meatballs from falling apart. Then cover the meat and refrigerate that for about half an hour.
Step 14
Now take them out of the fridge, pick up a small piece of meat mixture, about the size of a hazelnut, roll it between your hands, and shape it into a tiny ball. You can also use shredded chicken breast instead of minced meat.
Step 15
Put a pan on low heat, and add oil to cover the bottom of the pan. Once the oil gets hot, place meatballs one at a time in the pan and sauté them on each side until they get browning on the surface and cook through. The whole sautéing process could take about ten minutes.
Step 16
Once you have cooked the rice and they get tender, flip the pot on a large serving platter. Serve yourself a spatula full of rice and mung beans and pair them with the meatballs. We hope you give Mash polo a try and enjoy it!
