Ingredients for four people
Medium potatoes4
Lunch meat (bologna, salami, or ham)100 g
Walnut2 tbsp
Rice½ cup
Pickled cucumber200 g
Mayonnaise5 tbsp
Lemon juice1 tbsp
SaltTo taste
Black pepperTo taste

Cardinal Salad Recipe

Step 1

Wash and scrub the potatoes and remove any eyes. Fill a pot with 2 cups of water and add the potatoes and a tablespoon of salt. Heat the pot and bring it to a boil. Let potatoes simmer to fork tender.

Step 2

Score the peel of potatoes and take their peel off easily. Then chop them into medium size pieces and add them to a bowl.

Step 3

Wash and rinse the rice several times until it is clean from dust or excess starch. Put the rice in a pot and add a cup of water to cover the rice. Then put it on high heat to boil, and then reduce the heat to medium. Simmer it until most of the water evaporates.

Step 4

Now reduce the heat to low, cover the lid with a towel, and let the rice steam for 20 minutes to half an hour or until it is tender.

Step 5

Wash the celery and trim the ends and leaves from the stalks and peel off the strings. Finely chop the celery, pickled cucumbers, and lunch meat and set them in the bowl.

Step 6

Chop the walnuts by rocking the blade of a knife on them. You can also put it in a chopper and pulse them two or three times to get a coarsely chopped walnut. Then add the chopped walnuts and the rice to the bowl.

Step 7

To prepare the dressing, add mayonnaise, lemon juice, salt, and black pepper to a mixing bowl and whisk them to get uniform.

Step 8

Add the dressing to the salad bowl and stir them up. Mix them gently to get a uniform texture, and the ingredients are coated with the sauce.

Step 9

Your carinal salad is practically ready now, but to give a restaurant-quality look to this delicious salad, add them to a round mold. Press them gently with the back of your spoon and refrigerate that for at least two hours.

Step 10

Now place a serving platter on the mold and flip the salad on the plate. That is it. Make some for yourself and your friends, and enjoy!
