Beef Kebab Kofta Recipe | Easy and Delicious

Kebab Kofta Recipe
Cut the meat into medium size pieces and grind them with a meat grinder. You can grind them twice to have a smoother texture. It is recommended to use a combination of 85% lean meat and 15 % fat.
Peel and wash the onion and grate it with a fine grater. Then drain the grated onion juice and add it to the ground meat.
Wash the mint and parsley and chop them finely on your work surface. Add the chopped herbs, sumac, ground coriander seed, ground cumin, salt, and black pepper to the meat mixture and knead it with your hands for 10 minutes until it becomes sticky and cohesive. This will prevent the kebabs from falling apart while cooking.
Then cover the meat with a plastic film and put it in the refrigerator for half an hour to one hour to rest.
Take about the size of a tangerine of the meat mixture or roughly 100 grams, and knead them with your hand to form a ball. Now attach the meatball to a wooden or steel skewer. Spread the meat on the skewer and gently press it until it has about one centimeter thickness all over the skewer.
Light the charcoal of your barbeque and place the kebab Kofta skewers parallel to each other on the heat. Then turn them every minute to cook them properly. This quick turning will help the meat stick to the skewer and prevent it from falling off it. If you want to make your kebab Kofta on the barbeque and with wooden skewers, you should put them in water so they get wet and do not burn while cooking.
If you do not have any skewer, you can mold them in strips of about two centimeters in thickness and about four centimeters in width. However, if you want to make your kebab kofta like this, you need to cook them on a grill pan or oven.
For making kebab Kofta on a pan, you should grease the pan, place the kebab Kofta on it, and grill them on both sides. You can also make them in the oven; for this, you should grease the tray and preheat it to 160 Celsius or 325 Fahrenheit for 10 minutes. Then cook them until they get browning on the surface. Your kebab Kofta is ready. Serve it with parsley and onion and pair it with rice or bread. Enjoy your meal!
