Moroccan Rice Pilaf Recipe

Moroccan Rice Pilaf Recipe
Step 1
Wash the green beans and clip the two ends. Cut them into two centimeters pieces. Put a pot on heat, add two cups of water and one teaspoon of salt, and bring the water to a boil.
Step 2
Then pour the chopped green beans into boiling water and let it simmer for 2 minutes until the beans get softened. Then rinse them and put them into a bowl of cold water to keep the green beans green.
Step 3
Cut the chicken breast into 4- or 5-centimeters chunks. Then put a suitable pan on the heat and sauté the chicken meat with butter and brewed saffron until it changes color.
Step 4
Wash and remove seeds and membranes from the bell peppers. Now coarsely chop them and add them to the pan. Sauté the peppers until they become cooked and softened.

Now peel and finely chop the tomato and add it to the pan with salt and black pepper. Sauté the chopped tomato until it evaporates its juice.

Slice the mushrooms into your desired size, add them to the pan, and sauté until their liquid evaporates and becomes well cooked.

Now add the drained green beans and canned corn to the pan and sauté them for about 5 minutes. Then set them aside.
Step 8
Wash and rinse the rice using your hands to release any excess starch. Then pour off the water, and repeat that four to five times until the water runs clear. We recommend you use Basmati rice here since it gives a pleasant aroma to your pilaf.

Wash and peel the onion and chop it into small pieces. Then add it to a pot and sauté it until translucent.
Step 10
Add the ground turmeric to the pot and give a good stir. Let it cook until fragrant for about a minute.

Add the rice to the pot, and cook it while stirring for about 3 minutes. Then add water, salt, and black pepper and bring it to a boil. Reduce the heat and let the rice parboil for about 15 to 20 minutes until the liquid is absorbed.

Then add the chicken and vegetables to the pot and let it steam for about 10 minutes. The rice should be tender in the end. Your Moroccan rice pilaf is ready. Plate a spatula full of the pilaf for yourself and garnish it with chopped pistachios and cilantro. Enjoy your meal!
