Kookoo Sabzi Recipe
Kookoo Sabzi is one of the simple and delicious Iranian dishes. This dish combines fragrant vegetables, eggs, walnuts, and barberry.
Ingredients for four people | |
chives | 125 g |
parsley | 125 g |
dill | 125 g |
coriander | 125 g |
fenugreek | 25 g |
egg | 4 |
Dried barberry (optional) | 2 tbsp |
Garlic cloves (optional) | 2 |
Chopped walnuts (optional) | 2 tbsp |
Salt | 1.5 tsp |
Black Pepper | ½ tsp |
Turmeric | ½ tsp |
Vegetable oil | 5 tbsp |
Kookoo Sabzi Instructions
Step 1
Wash and dry the vegetables (coriander, parsley, dill, and chives), then chop finely.
Step 2
Put a pan on heat and add two tablespoons of oil. Once the oil is hot, add the chopped vegetables and sauté over low heat for 10 minutes.
Step 3
After 10 minutes, take the vegetables from the pan, pour them into a large bowl, and then allow them to cool.
Step 4
Grate the garlic cloves, then add the chopped walnuts, barberry, salt, black pepper, turmeric, and garlic to the bowl.
Step 5
Beat the eggs in a separate bowl and mix until smooth, then add to the bowl and mix all ingredients until smooth.
Step 6
Put a pan on heat and add three tablespoons of oil. Once the oil is hot, pour the ingredients into the pan and flatten it with the back of a spoon.
Step 7
Put the lid on the pan and let the Kookoo cook on medium heat for 15 minutes. After this time, cut the Kookoo into 4 or 6 parts.
Step 8
Turn the Kookoo pieces over and let them cook for another 15 minutes. There is no need to put the pan lid. Finally, serve the food with bread.
