Pumpkin Stew Recipe

Pumpkin Stew Recipe
Step 1
Firstly, peel and wash the onion and sauté them with a bit of liquid oil in the pot suitable for cooking the stew until the onions become light and translucent.
Step 2
At this stage, add some turmeric and black pepper to the pot and sauté them for one to two minutes until the spices are thoroughly mixed with the onion.

Cut the meat with a knife into medium size chunks. Depending on your preference, you can cut them into 4 to 6 centimeters chunks. Meat chunks will reduce in size while cooking, so they should not be cut into too small pieces. Besides, they need to be cooked all through so they cannot be too large.

Add the meat chunks to the pot and sauté them for 10 to 15 minutes until they change color. The meat will release liquid while sautéing and absorb it back again.

Add tomato paste to the pot and sauté it for a couple of minutes until it changes its color to dark red.

Add 4 cups of water to the pot and increase the heat to bring the water to a boil. Then lower the heat and let the meat cook thoroughly on a gentle heat.

Meanwhile, peel the pumpkin, and cut them into medium-sized cubes. They should be about the same size as the meat. Then sauté it with a bit of oil in a suitable pan until the pumpkins are completely fried. Frying the pumpkin will prevent them from breaking down when added to the stew.

To enhance the taste of the pumpkin, you can add a teaspoon of cinnamon to them. After two to three hours, when the meat is thoroughly cooked, add the fried pumpkins to the pot with some salt and let the stew thicken for 15 minutes.
Step 9
Fifteen minutes after adding the pumpkin to the stew, taste the seasoning of the stew and add the orange paste to the pot. You can also use lemon juice or pomegranate paste if the orange paste is unavailable. Serve the stew for a few minutes after the orange paste is combined with the stew.
