Cauliflower stew is one of the most delicious and popular Iranian stews. You can prepare this delicious stew in the fall when fresh cauliflower is available in the market. Cauliflower is so advantageous that you can benefit from preparing this stew. Among cauliflower’s most important benefits, it can be mentioned that it helps cardiovascular health, cancer prevention, body detoxification, and bone health. Cauliflower stew is usually cooked with red meat like lamb or beef, but it can also be prepared with white meat such as chicken and turkey. Cauliflower Stew Recipe

Step 1

Peel and wash the onion and chop it finely. Put a pan on the heat and sauté the chopped onion in some oil until translucent.

Step 2

Add black pepper, turmeric, and cinnamon to the pan and sauté them to mix the spices with the onion.

Step 3

Cut the meat into 4 to 6 centimeters chunks. Be careful not to cut them into too small or too large pieces since they will reduce in size while cooking, and they must be cooked all through. You can use meat with some fat in it, enhancing the taste and look of the stew.

Step 4

Add the meat to the sautéed onion and sauté them until it changes color. Stir them a couple of times to resettle every piece and to sauté on all sides. The meat will release some liquid while sautéing and absorb it back again.

Step 5

Now add tomato paste to the pan. Meanwhile, rinse and chop the herbs, and once the paste starts sizzling, add the chopped mint, dill, and parsley and stir the mix until it gets darker.

Step 6

Now add 3 cups of boiling water to the pot and put the lid on the pot. Let it simmer over gentle heat for about 2 to 3 hours until the meat is cooked thoroughly.

Step 7

After the meat is fully cooked, add brewed saffron and salt and let the stew thicken.

Step 8

In the meantime, thoroughly wash the cauliflower and clean it of dust. You can soak it for half an hour to force any insects out that are lodged within the florets. Then cut the cauliflower into medium pieces. Be careful not to chop the cauliflower too finely because it will make it mushy and spoil the appearance of the stew.

Step 9

Put a suitable pan on the heat and add some oil. Once the oil is hot, add the chopped cauliflower to the pan and sauté it until golden.

Step 10

Add the sautéed cauliflower and unripe grape to the pot and let the stew cook for 15 to 20 minutes to reach the right consistency. Your stew is ready when most of the water evaporates, and you see oil accumulating on the stew. Prepare some Persian rice and serve it with this delicious stew. Enjoy your meal!
