Potato Puffs Recipe
Wash and scrub the potatoes and remove any eyes. Cut them into small chunks and place them in a water-filled pot. Increase the heat and bring the water to a boil.
Let the potatoes simmer for 20 minutes or until fork tender. Then rinse the boiled potatoes and grate them in a mixing bowl. You can also mash them with a fork, masher, or even potato ricer to get a more uniform texture.
Crack the eggs in a large mixing bowl and add dried herbs, water, ketchup, black pepper, garlic powder, thyme, and chili powder.
Now sift the flour and baking powder into the bowl and stir them well until they are thoroughly mixed and uniform. Next, add the mashed potatoes to the bowl and mix until they are well incorporated.
Ultimately, the puff pastry should not be too loose or hard to be piped easily. If the puff pastry is tough, you should add a little water, and if it is loose, add a little flour to make it consistent. Add the potato mixture to a piping bag with your desired nozzle when it gets a smooth texture.
Put a deep pan on the heat and add enough oil to submerge the potato puffs. Let the oil get hot. Then pipe the potato into the pan and deep fry them while agitating until golden brown and crispy on all sides. You can use a knife to separate the potato puffs from the nozzle.
