Loobia Polo Recipe | Persian Green Bean and Rice
Loobia Polo
Loobia Polo is one of the simple and delicious Iranian dishes. This dish combines green beans, rice, beef or lamb, and tomato paste.
Ingredients for four people | |
green beans | 400 g |
Basmati Rice | 2 cups |

tomato paste | 3 tbsp |
cinnamon stick | 1 |
cinnamon powder | 2 tsp |
Ground saffron | ¼ tsp |
turmeric | 1 tsp |
black pepper | ½ tsp |
salt | 2 tsp |
Vegetable oil | 4 tbsp |
Loobia Polo Instructions
Step 1
Combine saffron with two tablespoons of boiling water and set aside to infuse. Cut the beef or lamb into 2 cm pieces.
Step 2
Peel an onion and chop it finely. Put a pan on heat and add two tablespoons of oil.
Step 3
Add onion and sauté for 2 minutes. Add beef or lamb with turmeric and sauté for 5 minutes until the meat changes color.
Step 4
Add tomato paste, black pepper, cinnamon stick, and sauté for another 5 minutes. Add two glasses of water and cover the pan to cook the meat for 1 hour.
Step 5
Meanwhile, cut the green beans into 2 cm pieces, then place a pan on heat and add one tablespoon of oil.
Step 6
Add the green beans once the oil is hot and sauté for 7 to 10 minutes. After 1 hour and 40 minutes, add the sautéed green beans with one tablespoon of salt to the pan containing the meat and let it cook for 20 minutes.
Step 7
Fill a large pot halfway with water and bring to a boil over high heat. Pour the rice into a bowl and wash until the water is clear, then add the rice with one tablespoon of salt to the boiling water.
Step 8
Stir the rice grains with a spoon so they do not stick together. After 7 to 10 minutes, press a few rice grains between your fingers. It is ready if the rice grains are soft and the kernel is firm.
Step 9
Drain the rice and let the excess water drain out. Choose a medium pot and pour the remaining oil into it. Pour a layer of rice into it, then add a layer of green bean sauce.
Step 10
Pour the rice and green bean sauce in layers into the pot. In the last layer, you have to add rice. Sprinkle cinnamon powder on the rice, then make a hole in the middle of the rice with a wooden spoon.
Step 11
put the pot on medium heat, then cover it. When the steam gathers, reduce the heat to the lowest setting and let the rice steep for 45 minutes.
Step 12
After 45 minutes, mix the bean pilaf with a wooden spoon until smooth, then pour into the desired dish and serve.
Notes
Loobia Polo with chicken
To make this dish with chicken, use 500 grams of boneless chicken breast or thigh meat instead of beef or lamb. The cooking recipe is no different.
