Kookoo Kadoo Sabz is one of the simple and delicious Iranian dishes. This dish combines zucchini, eggs, onions, and dried dill.

Ingredients for four people
medium Zucchini5

Dry dill1 tbsp
Salt2 tsp
Black Pepper 1 tsp
Turmeric1 tsp
Vegetable oil4 tbsp

Kookoo Kadoo Sabz Instructions

Step 1

Peel and grate Zucchinis and put them in a bowl. Sprinkle one tablespoon of salt on the zucchini and set aside for 30 minutes until the zucchini juice comes out.

Step 2

After 30 minutes, squeeze the grated zucchini by hand to remove excess water, then discard the water. Put the grated zucchini in the bowl again.

Step 3

Peel and grate the onion and garlic cloves, then add the onion, garlic, turmeric, black pepper, egg, and salt to the bowl.

Step 4

Mix the ingredients well until smooth, then put a pan on the heat, add the vegetable oil, and let it heat up.

Step 5

Take a walnut-sized piece of material and shape it into a round shape, then press a little with the palm of your hand to reduce its diameter.

Step 6

Now put it in the pan and fry for 5 to 7 minutes. After this time, turn the Kookoo over and fry the other side for another 5 to 7 minutes.

Step 7

Fry all the Kookoo ingredients in the same way. Finally, pour the Kookoo s into the desired dish and serve with bread.

Notes

Dietary Kookoo Kadoo Sabz

If you want to make this dish with fewer calories, increase the dry dill to 2 spoons and fry the Kookoos with olive oil instead of vegetable oil. You can even put the Kookoos in an oven tray and cook them without oil.

To cook the Kookoos in the oven, spread oil paper on the oven tray, then arrange the Kookoos and cook at 200 degrees Celsius for 10 minutes. After this time, return the Kookoos and cook for another 10 minutes.
