Kookoo Sibzamini, also known as Persian potato patties, is a traditional Iranian dish made with potatoes, eggs, and a blend of spices. This oven-baked version offers a healthier twist, making it easy to prepare while still delivering the same delicious flavors.

Ingredients
- Potatoes (Medium) – 4
- Eggs – 2
- Garlic cloves – 2
- Small onion – 1
- Vegetable oil – 3 tbsp (for greasing)
- Dried parsley – 1 tbsp
- Turmeric – 1 tsp
- Black pepper – ½ tsp
- Salt – 2 tsp
Step 1: Prepare the Potatoes
- Wash the potatoes thoroughly and place them in a pot with three cups of water. Add 1 teaspoon of salt to the water.
- Boil the potatoes for about 30 minutes or until they are tender.
Step 2: Cool and Peel
- After boiling, drain the water and let the potatoes cool down. Once cooled, peel the potatoes completely.
Step 3: Grate the Ingredients
- Grate the cooled potatoes into a large mixing bowl.
- Peel and finely grate the garlic cloves and onion, then add them to the potatoes.
Step 4: Add Seasonings
- To the potato mixture, add the dried parsley, turmeric, black pepper, and the remaining salt.
- Mix well to ensure the seasonings are evenly distributed.
Step 5: Beat the Eggs
- In a separate bowl, crack the eggs and beat them until smooth.
- Pour the beaten eggs into the potato mixture and blend until the mixture is smooth and fully combined.
Step 6: Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking dish or baking tray with vegetable oil to prevent sticking.
Step 7: Shape the Kookoo
- Scoop out portions of the mixture and shape them into small patties, about the size of a large walnut.
- Place each patty on the greased baking dish, flattening slightly with your hand.
Step 8: Bake
- Place the baking dish in the preheated oven and bake for 20-25 minutes.
- After 10-12 minutes, flip the patties to ensure even baking.
- Once they are golden and crisp on both sides, remove them from the oven.
Step 9: Serve
- Serve the Kookoo Sibzamini warm, accompanied by fresh bread or as a side dish.
