Cutlets are one of the best choices for picnics, afterschool snacks, or even the main course of your parties. They are tender, flavorful, and juicy, with a crispy layer on the outside. They can be made with chicken meat, ham, or beef. Today at Tak Recipe, we want to share our version of cooking chicken cutlet. We have tried many methods for preparing these delicious cutlets, and now we will share two of the most delicious ones. Method 1 :

Chicken Cutlets Recipe

Step 1

Peel and wash the onions and garlic cloves, and grate them with a fine grater or put them in a food processor and process them mixed. Squeeze their juice entirely and put them in a bowl.

Step 2

Cut the chicken meats into pieces and grind them twice with a meat grinder or a food processor until it becomes sticky. You should use a combination of thigh and breast since their fat will make the ground meat a little sticky and cohesive. Add them to the grated onions and garlic.

Step 3

Now you need to add two tablespoons of chopped bell pepper. For this purpose, wash and remove their membrane, then chop them finely into small pieces. It is better to use a combination of different colors of bell peppers to have nice-looking cutlets.

Step 4

Now pour the brewed saffron along with ground red chili pepper, black pepper, and salt into the meat mixture and mix the ingredients thoroughly with your hands. You should knead until they are completely uniform.

Step 5

If you have enough time, cover the bowl with plastic film and put it in the refrigerator for an hour to firm up and infuse the meat with flavor.

Step 6

Take a little bit of the mixture, about the size of a medium-sized meatball, and shape it into a round or oval shape with your hands, then flatten it a little until it gets about 5 millimeters thick.

Step 7

Put a pan on low heat and pour some oil. Heat the oil to 175 Celsius or 350 Fahrenheit degree. Then carefully place the chicken patty in the oil.

Step 8

Fry each side for about 5 to 7 minutes on low heat until they are cooked inside and crispy outside. Then transfer them to a platter and serve.

Method 2 :

Chicken Cutlets Recipe

Step 1

In this method, we will use potato and egg in cutlets. Firstly, same as above, grate the onion and garlic and drain the juice out of them.

Step 2

Grind the chicken meat with a grinder or a food processor to form a uniform texture. Add the ground meat to the onions and garlic.

Step 3

Now grate the potato with a fine grater and add it to the bowl. You should also strain them in a colander to drain their juice.

Step 4

In a small bowl, crack one egg and whisk it with a fork until frothy. Add the beaten egg, salt, black pepper, and turmeric to the cutlet mixture and mix them with your hand to get completely uniform. Then wrap it with a plastic film and refrigerate for an hour.

Step 5

Then put a pan on low heat and let it get hot. Then add a tablespoon of butter and two tablespoons of oil to it. Once the oil is hot enough, mold the cutlets to flattened round or oval shapes and place them in the pan. You can also spray some saffron on the cutlets to make them more colorful and tastier.

Step 6

After about 5 to 8 minutes, when one side of the cutlets is completely fried, turn them over to dry the other side. Then place the chicken cutlets on a paper towel to dab off the excess oil, transfer them to the desired dish, and serve with pickled cucumbers, tomatoes, olives, and bread.

Note: you can also make them crispier by coating them with bread crumbs. For this purpose;

Step 1

Employ a three-part breading station or three bowls. Add one cup of all-purpose flour, one cup of bread crumbs, and two beaten eggs to the containers. You can add salt, paprika, and garlic powder to the bread crumbs and mix them well.

Step 2

Now sit the molded cutlets in the flour. Dust off the excess flour and dip them in the beaten eggs to coat. Then toss them into the bread crumbs to coat every crevice.

Step 3

Another point about frying the crispy chicken cutlets is that you should pour enough oil into the pan so that the cutlets will submerge in the oil while frying. Then use a towel to remove excess oil from the cutlets.
