Yatimcheh Recipe
Yatimcheh is one of the traditional and ancient foods of Iran. This dish combines eggplant, tomato, potato, bell pepper, garlic, and onion.
Ingredients for four people | |
Medium eggplant | 4 |
Large potatoes | 1 |
Medium tomatoes | 4 |
Bell pepper | 1 |
tomato paste | 1 tbsp |
Garlic cloves | 4 |
lemon juice | 1 tbsp |
Salt | 3 tsp |
Black Pepper | 1 tsp |
Turmeric | 1 tsp |
Vegetable oil | 2 tbsp |
Yatimcheh Recipe
Step 1
Peel the eggplants, then cut them into small cubes one centimeter by one centimeter. Pour two teaspoons of salt and two glasses of water into a bowl and mix.
Step 2
Put the eggplants in salted water and let them rest in the bowl for 30 minutes. After this time, pour the eggplants into the strainer and wash them with cold water.
Step 3
Peel onion and chop finely. Put a pan on medium heat, add vegetable oil, and let it heat up.
Step 4
Add the chopped onion to the pan and sauté for 3 minutes, then add the turmeric, and black pepper, and sauté for another 2 minutes.
Step 5
In the meantime, peel the potatoes and cut them into 1 cm cubes, Then wash them with cold water and dry them.
Step 6
Grate the garlic and add, then sauté for a minute. Add the potatoes and sauté for another 5 minutes.
Step 7
After this time, add the eggplants, black pepper, turmeric, and the rest of the salt and sauté for 5 minutes.
Step 8
Finely chop the bell peppers and tomatoes and add with the tomato paste. sauté all ingredients for 10 minutes, then add half a cup of water.
Step 9
Put the lid on the pan and let the Yatimcheh cook for 30 minutes. After this time, add lemon juice, then serve the Yatimcheh with bread.
Notes
Yatimcheh with beef
You can make this dish with chopped beef or ground beef. After frying the onion, add the meat to the pan and sauté for 5 minutes until it turns dark, then continue the steps as above.
