Kotlet Shirazi Recipe
Kotlet Shirazi (Shirazi cutlet) is one of the simple and delicious Iranian dishes. This dish combines potatoes, onions, breadcrumbs, and spices.
Ingredients for four people | |
Medium potatoes | 5 |
Toasted flour | ½ Glass |
Medium onion | 1 |
turmeric | 1 tsp |
black pepper | 1 tsp |
salt | 2.5 tsp |
vegetable oil | 4 tbsp |
Kotlet Shirazi Instructions
Step 1
Wash the potatoes, put them in a saucepan with three glasses of water and one tablespoon of salt, and cook over medium heat for 40 minutes.
Step 2
Peel an onion and chop it finely. Put a pan on heat and add one tablespoon of vegetable oil, then add the onion and Saute for 5 minutes.
Step 3
After 5 minutes, take the Sauteed onion from the pan and pour it into a large bowl. After 40 minutes, peel the potatoes.
Step 4
Add the potatoes with the black pepper, turmeric, breadcrumbs, and the rest of the salt to the bowl containing the Sauteed onions.
Step 5
Mash the potatoes with the back of a spoon or a heavy object, then mix the ingredients by hand for 5 minutes until smooth.
Step 6
Put a pan on heat and add the remaining vegetable oil. Wait a while for the oil to heat well.
Step 7
Take a small ball of material and shape it into a round shape, then press it with the palm of your hand to reduce its diameter and place it in the pan.
Step 8
Fry each side of the cutlet for 5 to 7 minutes. Fry all the cutlets in the same way, then serve with bread.
Notes
Kotlet Shirazi tips
If the heat is too high, the cutlet crust will burn quickly, but it remains uncooked in the center and taste bitter.
The heat should be medium-low so that the cutlets are fried at the proper time and well-cooked inside.
The cutlet will fall apart if you don’t mash the potatoes properly and knead evenly.
