Ingredients
  

  • 400 g Green beans
  • 400 g Beef or lamb meat
  • 2 tbsp Tomato paste
  • 1 Large onion
  • 3 Garlic
  • 1 or 2 tbsp Lemon juice, verjuice, or unripe sour grapes
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 1 tsp  Ground turmeric

Instructions
 

  • Peel and wash the onion and chop them finely. Put a pot on medium heat and add some oil. Once it gets hot, add chopped onion to the pot and sauté them until translucent.
  • Now grate the garlic cloves and add them to the pot. Sauté for a few minutes until it releases its aroma and is about to start changing color. Then add turmeric and black pepper to the pot and sauté to mix it with the ingredients and give a golden hue to them.
  • Then wash and pat dry the meat. Chop it into medium size chunks, about 4 to 6 centimeters. Be careful that small-sized chunks will affect the appearance of the stew, and large chunks are difficult to cook through. You can also use chicken meat for this stew, but you need to use more of them.
  • Add the chopped meat to the pot and sauté them for about 10 to 15 minutes until it changes color but is not overcooked. The meat releases some liquid while sauteing and absorbs it back again.
  • Now add 6 cups of water to the pot and let them boil on high heat. Then reduce the heat and let the meat simmer for about one hour.
  • After the meat is half cooked, add the tomato paste. This will enhance the taste and appearance of the stew. You can also sauté the tomato paste a few minutes before adding it to the pot to remove the tomato’s rawness and make the stew more colorful at the end.
  • Let the stew simmer for one to two hours until the meat is fully cooked. You can also reduce the heat to very low and let it simmer longer if you have enough time.
  • Meanwhile, wash and rinse the green beans and drain excess water. Then clip the two ends and cut them into one to two centimeters pieces. Next, sauté the green beans with a small amount of oil until they are slightly cooked. Be careful not to sauté the beans for a long time; otherwise, they will get hard.
  • Once the meat is cooked and becomes tender, add the chopped green beans, salt, black pepper, and lemon juice to the pot. You can also substitute lemon juice with verjuice or unripe sour grapes.
  • Now let the stew gently simmer on low heat for about 30 to 40 minutes until the stew thickens and you see oil accumulating on the surface. This stew is served moist but not watery. When the stew reaches your desired consistency, transfer it to a bowl and serve it with rice or bread. Enjoy your meal!

Tips

You can also make this delicious stew with split peas. For this, soak 150 grams of split peas over a night. Then rinse the split peas, and once the meat is sautéed, add them to the pot. The rest is as above.
