Torshi Shami is one of the most popular dishes in Gilan province in Iran. This dish combines minced beef or lamb, onion, tomato, pomegranate paste, coriander, and parsley.

Ingredients for four people
Minced beef or lamb500 g
medium onion2
Medium tomatoes4
tomato paste3 tbsp
Pomegranate paste2 tbsp
Chickpea flour1 tbsp
Medium potatoes2
fresh coriander50 g
fresh parsley50 g
dried mint1 tbsp
Lemon juice2 tbsp
Salt2 tsp
Turmeric1 tsp
Black pepper1 tsp
Vegetable oil8 tbsp

Torshi Shami Instructions

Step 1

Finely chop the parsley and coriander. Peel and grate the onion, then squeeze it with your hands to remove excess water.

Step 2

Pour the ground beef or lamb into a bowl with onion, parsley, coriander, chickpea flour, half salt, half turmeric, and half black pepper.

Step 3

Knead the ingredients by hand for 5 minutes until they are completely uniform. Take the size of two walnuts from the meat mixture and shape it into a round shape.

Step 4

Shape all the meat mixture in the same way, then put a pan on heat and add four spoons of oil. Add the meatballs and fry completely.

Step 5

After frying the meatballs, take them out of the pan and set them aside. Add the two spoons of oil to the pan and let it heat up.

Step 6

Add the tomato paste and sauté for 3 minutes, then add the pomegranate paste, dried mint, the rest, salt, turmeric, black pepper, and sauté for another 1 minute.

Step 7

Add a cup of boiling water to the pan and stir, then slowly add the meatballs and let them cook for 30 minutes. Cut the tomatoes in half and add them.

Step 8

Cut the potatoes like french fries, wash with cold water, and dry. Heat a pan, add two spoons of oil, and then wait for the oil to heat up.

Step 9

Add the potatoes to the pan and fry, then set aside. After 30 minutes, add the lemon juice to the pan and let it cook for another 5 minutes.

Step 10

Arrange the Shamis in the dish of your choice, pour the rest of the sauce on them, then garnish with fried potatoes and tomatoes and serve.
