Vegan Lebanese Mujadara Recipe: Rice, and Caramelized Onion

- 1 cup brown or green lentils

Cook the Lentils:
Begin by rinsing the lentils thoroughly under cold water. In a large pot, combine the lentils and 3 cups of water (or vegetable broth for extra flavor). Bring the mixture to a boil, then reduce the heat to low and simmer for about 15-20 minutes, or until the lentils are tender but not mushy. Prepare the Rice:
