  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon breadcrumbs (for topping)

Prepare the Ingredients

Boil the Potatoes – In a large pot, bring water to a boil. Wash the potatoes but leave the skins on. Boil them for about 15-20 minutes until they are just tender but not too soft. Drain and let them cool before peeling and slicing them into ½-inch rounds. Boil the Eggs – In a separate pot, boil the eggs for about 10 minutes until fully hard-boiled. Cool them in ice water, peel, and slice them into thin rounds. Prepare the Sausage – Slice the smoked sausage into thin rounds. You can lightly fry them in a dry pan for added flavor, but this is optional.

Assemble the Layers

Preheat the Oven – Set your oven to 375°F (190°C). Grease a baking dish with butter. First Layer – Arrange half of the potato slices evenly on the bottom of the dish. Lightly season with salt, black pepper, and a sprinkle of paprika. Add Eggs and Sausage – Layer half of the sliced eggs and half of the sausage on top of the potatoes. Spread half of the sour cream over this layer. Repeat the Layers – Add another layer of potatoes, followed by the remaining eggs, sausage, and sour cream. If using cheese, sprinkle half of it between the layers. Final Touches – Finish with a top layer of potatoes, then spread the remaining sour cream over it. Bake the Casserole

Bake for 35-40 Minutes – Place the dish in the oven and bake until the top is golden and bubbly. If you want an extra crispy top, broil for an additional 3-5 minutes at the end. Rest Before Serving – Let the casserole cool for about 10 minutes before slicing. This helps the layers hold together better.
