Traditional Uzbek Norin Recipe – A Central Asian Classic

Ingredients (Serves 4)
- For the Noodles:
- 2 cups all-purpose flour
- 1 egg
- ½ teaspoon salt
- ½ cup water (as needed)
- For the Meat and Seasoning:
- 300g horse meat (or beef as an alternative)
- 1 onion, finely chopped
- 2 tablespoons vegetable oil
- 1 teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon ground coriander
- 1 clove garlic, minced
- ½ cup beef broth
Prepare the Dough for Noodles
In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the egg into it. Gradually add water while mixing until a firm dough forms. Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 20 minutes. Roll out the dough into a thin sheet, about 1-2 mm thick. Allow it to dry slightly before cutting. Using a sharp knife, slice the dough into very thin, long strips (similar to tagliatelle). Set aside.
Cook the Meat
In a pot, bring water to a boil and add the horse meat. Cook over medium heat for about 40-50 minutes until tender. Once cooked, remove the meat and allow it to cool slightly before shredding it into thin strips. In a pan, heat the vegetable oil over medium heat and sauté the chopped onions until golden brown. Add the shredded meat, black pepper, salt, coriander, and minced garlic. Stir well and cook for another 5 minutes. Pour in the beef broth and let the mixture simmer for 5 more minutes to enhance the flavors.
Cook the Noodles and Assemble
In a separate pot, bring salted water to a boil and cook the hand-cut noodles for 3-4 minutes until tender. Drain and rinse under cold water to prevent sticking. In a large mixing bowl, toss the noodles with the cooked meat mixture. Stir well to evenly distribute the flavors. Serve Norin warm or at room temperature, garnished with freshly ground black pepper.
