- 500g (1 lb) chicken (thighs or drumsticks)
- 1 cup chickpeas (soaked overnight or canned)
- 1 onion (finely chopped)
- 3 cloves garlic (minced)
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1 teaspoon turmeric
- 1 teaspoon black pepper
- 1/2 teaspoon ground ginger
- 1 teaspoon salt (adjust to taste)
- 1 tomato (grated or finely chopped)
- 1 carrot (sliced)
- 1 zucchini (sliced)
- 1 liter (4 cups) chicken broth or water
- Fresh cilantro for garnish
Prepare the Rechta Noodles
In a large bowl, mix the semolina flour, all-purpose flour, and salt. Gradually add water while kneading until a smooth and elastic dough forms. Cover the dough with a cloth and let it rest for 30 minutes. Roll out the dough into a thin sheet and cut it into very thin strips resembling fettuccine. Steam the noodles in a couscoussier (steamer pot) for about 15 minutes. Remove, sprinkle with a bit of water, and let them rest before steaming again for another 10 minutes.

Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent. Stir in minced garlic, cinnamon, turmeric, black pepper, ginger, and salt. Let the spices bloom for about 30 seconds. Add the chicken pieces and sear them on all sides for 5-7 minutes until golden brown. Stir in the grated tomato, chickpeas, and sliced carrots. Cook for another 3 minutes. Pour in the chicken broth (or water) and bring the mixture to a gentle boil. Cover and let it simmer for 45 minutes or until the chicken is tender. Add the sliced zucchini in the last 10 minutes of cooking to prevent it from becoming too soft.
