- 3 cloves garlic – minced
- 2 Thai red chilies – finely chopped
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon palm sugar (or brown sugar)
- ½ cup water
- 1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)
- 1 tablespoon lime juice
- For Garnishing:
- Fresh cilantro – chopped
- Sliced red chilies (optional)

Prepare the Fish
Rinse the fish and pat it dry using paper towels. Make diagonal cuts on both sides to ensure even frying. with salt and pepper, then dust lightly with cornstarch to achieve extra crispiness.
Fry the Fish
