Ingredients (Serves 4)

  • For the Rakfisk:
  • 2 whole fresh trout (gutted and cleaned)
  • 2 tbsp coarse sea salt
  • 1 tbsp sugar
  • 1 tsp black pepper
  • 2 cups water
  • 1 cup whey (optional, for better fermentation)
  • Accompaniments:
  • 4 pieces Lefse (Norwegian flatbread)
  • ½ cup sour cream
  • ½ red onion (finely chopped)
  • 1 tbsp fresh dill (chopped)
  • 4 small boiled potatoes (optional)

Fermenting the Trout

Rinse the cleaned trout thoroughly and pat dry. In a large, clean glass or ceramic container, rub the trout with salt, sugar, and black pepper. Pour in the water (and whey, if using) to cover the fish completely. Press the fish down with a heavy plate or sterilized weight to keep it submerged. Cover the container loosely with a lid or cloth and store it in a cool (4-8°C / 39-46°F), dark place. Let it ferment for 4-8 weeks (or up to 3 months for a stronger flavor).

Preparing the Dish

Once fermentation is complete, rinse the fish lightly under cold water and fillet it carefully. Slice the fillets into thin pieces and arrange them on a plate. Serve with lefse, sour cream, chopped red onions, fresh dill, and boiled potatoes.

Enjoying Rakfisk

Traditionally, rakfisk is eaten by layering it onto lefse, adding sour cream and onions, and rolling it up. Pair with Aquavit (Norwegian spirit) for an authentic experience!
