Ingredients (Serves 4)
- For the Noodles & Toppings
- 400g rice noodles (thin or medium-sized)
- 2 tbsp peanuts, chopped
- 2 tbsp fried garlic
- 2 tbsp fresh cilantro, chopped
- 2 tbsp scallions, chopped
- ½ cup pickled mustard greens (optional)
- For the Shan Noodle Sauce
- 250g chicken or pork, minced
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp fermented soybean paste (or miso as a substitute)
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 tsp paprika
- ½ tsp chili powder (adjust to taste)
- 3 medium tomatoes, finely chopped
- ½ cup chicken broth or water
- For the Side Soup (Optional but Traditional)
- 3 cups chicken broth
- ½ tsp salt
- ¼ tsp white pepper
Cook the Noodles
Bring a large pot of water to a boil. Add the rice noodles and cook according to the package instructions (typically 3-5 minutes). Drain the noodles and rinse with cold water to prevent sticking. Set aside.
Prepare the Shan Noodle Sauce
Heat 2 tbsp of vegetable oil in a pan over medium heat. Add minced garlic and grated ginger. Sauté until fragrant (about 1 minute). Add the minced chicken or pork and cook until browned. Stir in the fermented soybean paste, soy sauce, and fish sauce. Mix well. Add chopped tomatoes, sugar, paprika, and chili powder. Cook for about 5-7 minutes, stirring occasionally. Pour in ½ cup of chicken broth or water. Simmer for another 10 minutes until the sauce thickens and the tomatoes break down completely.
Prepare the Side Soup (Optional)
In a separate pot, heat chicken broth with salt and white pepper. Simmer for 5 minutes and serve as a light soup on the side.
Assemble the Shan Noodles
