Carrot halwa is one of the most simple and sweet Iranian halwa we can use as a dessert. Carrot halwa is always famous because of its lovely color.

Ingredients for four people
All-purpose flour1 cup
Liquid oil½ cup + 4 tbsp
Sugar2 cup + 2 tbsp
Rose water½ cup + 4 tbsp
Carrot500 g
Brewed saffron2 tbsp
Cardamom powder½ tsp

Carrot Halwa Recipe

Step 1

To prepare this delicious halwa, wash the carrots, put them in a suitable pot, and add one glass of water. Next, we put the pot on the heat to cook the carrots. Be prepared to budget at least 30 minutes to get the carrots to the right soft level they need.

Step 2

Put the carrots in a blender and puree. Note that we must puree the carrot well to have a uniform texture.

Step 3

Lightly toast your flour by moving it around in an un-oiled pan. Once you see (and sometimes smell) the flour starting to brown, you’ll add liquid oil.

Step 4

The second you hear the sizzle of the oil in the pot, start to stir vigorously and fold your flour into the oil. Keep going until everything is integrated and you’ve stirred out most of the clumps.

Step 5

Now it’s time to combine your softened carrots with sugar, rose water, saffron, and cardamom (optional) into the mix. Fold your carrots into the golden paste, and continue mixing around vigorously.

Step 6

Now the ingredients should be mixed well so that their texture is uniform, then slowly start stirring the halwa until it is integrated well and can be easily separated from the pan walls. Stir until the halva become a smooth-looking paste ready to go.

Step 7

Spread it into your serving dish, garnish it, and then set it aside to let it cool. When soft, cut a slice for yourself, and enjoy!
