Persian Kabab Digi Recipe | Easy and Delicious
Kabab Digi is one of the traditional and delicious Iranian dishes, which is kebab but a little bit different from the regular barbecue ones since it just has to be on a pan!
|Ingredients for two people|
|minced lamb or beef||300 g|
|Green bell pepper||1|
|Black pepper||1 tsp|
|Tomato paste||2 tbsp|
Kabab Digi Recipe
Peel the onion and grind them first. You should take a little bit of the juice out of it. You do not need to drain it hard.
Add minced meat to it and mix them as much as you can.
Add turmeric, salt, black pepper, and chopped garlic to the meat. Then we mix the ingredients well with our hands till they are combined and uniform.
Cover the mix with a plastic film and let it sit in the fridge for 45 minutes.
For preparing the sauce, put a pan on heat and add two tablespoons of oil. Then sauté the tomato paste. When it starts sizzling, you should add sumac and paprika. Stir the mix till it gets darker. Then add a cup of water and stir till the ingredient become uniform. Then turn off the heat.
Put a suitable pan on low heat and add some oil. Then, wet your hand and divide the kebab mixture into two to four parts and shape it in your hand. Then put it in the pan.
close the lid of the pan and sauté both sides of the meats.
After the meat juice evaporates, put a slice of tomato on each kebab, pour the sauce into it, and let it cook on medium heat for 15 to 20 minutes.
soak the rice for 20 minutes. Then, pour the rice into the pot and pour enough water to cover the rice with a finger. You can add 2 tbsp salt and butter now. Then we put the pot on heat.
wait until all the water in the rice is drained. Then, put a towel on the lid, reduce the heat to a minimum and let the rice brew for 40 minutes.
Finally, after the kebabs are cooked, put the kebabs and tomatoes in a suitable dish. You can pour the remaining sauce in the pan into a separate bowl, then serve the rice in the dish. Enjoy your meal.
