Today on the Takrecipe website, we’re diving into the delicious world of Zambian cuisine with the classic Ifisashi. This flavorful dish is a combination of spinach (or other leafy greens) cooked in a creamy peanut sauce, offering a savory and satisfying experience. Perfectly balanced with the rich flavor of ground peanuts and the fresh taste of spinach, Ifisashi can be served with a side of nshima (a traditional Zambian maize porridge) or rice, making it a wholesome meal. Easy to make and full of flavor, this dish brings a taste of Zambia to your table!

Servings: 4-6 people

  • 1 bunch fresh spinach (or 2 cups frozen spinach)
  • 1 cup ground peanuts (or peanut butter)
  • 2 medium tomatoes, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 2 cups water or vegetable broth
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon chili powder (optional, for heat)
  • 1 tablespoon ground ginger (optional for added depth)
  • 1 teaspoon of soy sauce or Worcestershire sauce (optional, for added flavor)

Prepare the vegetables:

Wash the spinach thoroughly, removing any tough stems. If using fresh spinach, roughly chop it. If using frozen, allow it to thaw and drain excess water.

Prepare the peanut sauce:

In a separate bowl, mix the ground peanuts or peanut butter with water (or vegetable broth) until you get a smooth, creamy consistency. Set aside.

Cook the onions and garlic:

In a large pot or pan, heat the vegetable oil over medium heat. Add the chopped onions and garlic, cooking until they become soft and translucent (about 3-5 minutes).

Add the tomatoes:

Add the chopped tomatoes to the pan and cook for another 5 minutes, stirring occasionally. The tomatoes should soften and release their juices, forming a base for the sauce.

Add the peanut mixture:

Pour in the prepared peanut sauce (ground peanuts mixed with water or broth) into the tomato-onion mixture. Stir well, and cook for 5-7 minutes, letting the flavors meld.

Add the spinach:

Once the peanut mixture has thickened slightly, add the spinach to the pot. Stir gently, and cook for another 10-12 minutes until the spinach is tender and well-coated in the peanut sauce.

Season to taste:

Add salt, pepper, chili powder, ginger, and soy sauce (if using). Adjust the seasonings to your preference and cook for another 2-3 minutes.

Serve:

Serve the Ifisashi hot with nshima, rice, or your preferred starch.

Cooking Tips:

Smooth Peanut Sauce:

🟢If using peanut butter, make sure it’s unsweetened and without additives to keep the flavor authentic. You can also grind raw peanuts for a richer taste.

Use Fresh Spinach:

🟢Fresh spinach gives the dish a fresher taste and vibrant color. However, frozen spinach works just as well if fresh isn’t available.

Adjust Spice Levels:

🟢The chili powder is optional but adds a delightful heat. You can also add a little cayenne pepper for extra spice or reduce the chili powder for a milder version.
