Ifisashi Recipe: Traditional Zambian Dish with Spinach

Servings: 4-6 people
- 1 bunch fresh spinach (or 2 cups frozen spinach)
- 1 cup ground peanuts (or peanut butter)
- 2 medium tomatoes, chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 2 cups water or vegetable broth
- Salt to taste
- Pepper to taste
- 1 tablespoon chili powder (optional, for heat)
- 1 tablespoon ground ginger (optional for added depth)
- 1 teaspoon of soy sauce or Worcestershire sauce (optional, for added flavor)
Prepare the vegetables:
Wash the spinach thoroughly, removing any tough stems. If using fresh spinach, roughly chop it. If using frozen, allow it to thaw and drain excess water.
Prepare the peanut sauce:
In a separate bowl, mix the ground peanuts or peanut butter with water (or vegetable broth) until you get a smooth, creamy consistency. Set aside.
Cook the onions and garlic:
In a large pot or pan, heat the vegetable oil over medium heat. Add the chopped onions and garlic, cooking until they become soft and translucent (about 3-5 minutes).
Add the tomatoes:
Add the chopped tomatoes to the pan and cook for another 5 minutes, stirring occasionally. The tomatoes should soften and release their juices, forming a base for the sauce.
Add the peanut mixture:
Pour in the prepared peanut sauce (ground peanuts mixed with water or broth) into the tomato-onion mixture. Stir well, and cook for 5-7 minutes, letting the flavors meld.
Add the spinach:
Once the peanut mixture has thickened slightly, add the spinach to the pot. Stir gently, and cook for another 10-12 minutes until the spinach is tender and well-coated in the peanut sauce.
Season to taste:
Add salt, pepper, chili powder, ginger, and soy sauce (if using). Adjust the seasonings to your preference and cook for another 2-3 minutes.
Serve:
Serve the Ifisashi hot with nshima, rice, or your preferred starch.

Smooth Peanut Sauce:
