Carrot Stew Recipe
Carrot stew is one dish that melts in your mouth when you start eating. This is one of the most delicious Persian dishes, and today we will teach you how to make it.
Ingredients for four people | |

Carrot | 2 |
Golden sour prunes (Aloo Bokhara) | 12 or 100 g |
large onion | 1 |
Tomato paste | ½ tbsp |
Lemon juice | 2 tbsp |
Salt | 2 tsp |
Ground black pepper | 1 tsp |
Turmeric | 1 tsp |
Cinnamon | ½ tsp |
Brewed saffron | 1 tbsp |
Vegetable oil | 5 tbsp |
Sugar (optional) | 2 tsp (or to taste) |
Carrot Stew Recipe
Step 1
Peel and coarsely chop the onion, put a pan on the heat and add two tablespoons of oil. Then sauté the onions in oil over medium heat until they get translucent.
Step 2
After it becomes cooked and softened, add ground black pepper and turmeric and stir them for another minute until the aroma of the spices is released.
Step 3
Chop the meat and add it to the pan, then sauté for 10 minutes until the color of the meat changes. Then add salt and cinnamon.
Step 4
Add 4 cups of water to the pot to cover all the meats. When it starts boiling, turn the heat to low and let it cook for about an hour.
Step 5
Meanwhile, wash the carrots and cut them into slices. Then put a pan on the heat and sauté the carrots in oil over medium heat separately. Put the lid on and let them be cooked and softened.
Step 6
Add tomato paste to the carrots and sauté them. When it starts sizzling, you should add sugar and brewed saffron. Stir the mix till it gets darker.
Step 7
After an hour, when the meat is fully cooked, add carrot mixture to the pot containing the meat, then stir them well, and let it cook for half an hour.
Step 8
Now add the dry prunes and lemon juice to the pot. Then put the lid and let it cook for 15 minutes to half an hour. You can add more prune or sugar if you want it sweeter or eliminate them if you do not like prunes.
Step 9
Let the water in the stew simmer and reduce. You can taste the stew and ensure it does not need any more salt, lemon juice, or sugar. When it gets a nice thick consistency, plate the stew into the desired dish and serve it with rice. Enjoy your nice smelling and delicious meal.
