  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped (for garnish)

Prepare the Vegetables

Wash all the vegetables thoroughly. Chop the onions, mince the garlic, and cut the carrots, bell peppers, zucchini, eggplant, and potatoes into bite-sized pieces. Shred the cabbage and cut the cauliflower into florets. If using fresh tomatoes, chop them finely or blend them for a smoother consistency.

Sauté the Aromatics
