Shami Kabab Recipe | Delicious Iranian Cutlet
Cutlet or Shami kabab is among the most popular and delicious Persian dishes. Cutlet is made with meat and potato and is usually served with cold or warm bread. Cutlet can be served as a main dish, appetizer, trip food, or cold sandwich. Cutlets can also be made for vegetarians by substituting mushrooms and soybeans instead of meat to enjoy this dish.

Shami Kabab Recipe
Scrub potatoes well and remove any eyes and peel them. Peel the onion and grate them.
Peel the onions and grind them first. You should drain the juice out of it. Mix the drained onions and potatoes.
Add minced meat to them and mix them with your hand as much as possible.
Add turmeric, salt, black pepper, red pepper, ginger powder, and curry to the meat. Then mix the ingredients well with your hands till they are combined and uniform.
Add egg to the mixture. The egg will make the cutlet ingredients stick together better and make the cutlet a little puffy and tender. Then, add breadcrumbs to the mixture and mix the ingredients well with our hands till they are combined and uniform.
Cover the mix with a plastic film and let it sit in the fridge for an hour.
Put a suitable pan on low heat and add some oil. Let the oil get hot; this will help the cutlet not stick to the pan and use less oil. Then, take a little bit of the cutlet, about the size of a small tangerine, and shape it into a round or oval shape with our hands, then flatten it a little until it gets about 5 millimeters thickness. Then put it in the pan.
Close the lid of the pan and sauté both sides of the cutlets. Each side of the cutlets should be sautéed for about 5 to 7 minutes on low heat until they are completely cooked inside and crispy outside.
For preparing the sauce, peel the Tomatoes and puree them with a blender. Then put a pan on the heat and add two tablespoons of oil. Then sauté the pureed Tomato in oil over medium heat. Let the Tomato juice evaporate.
Then add the tomato paste. When it starts sizzling, you should add salt, black, and red pepper. Stir the mix till it gets darker ingredients become uniform. Then turn off the heat.
Finally, after the cutlets are cooked, put the cutlets and the sauce in a suitable dish. You can pour the sauce on the cutlets. Serve this crispy and delicious Shami kabab with bread and some pickles and lettuce. Enjoy your meal.
