Ingredients (Serves 4)
- 2 large eggplants (baingan)
- 2 tablespoons oil (mustard oil preferred)
- 1 large onion, finely chopped
- 2 medium tomatoes, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, finely chopped
- 1 teaspoon cumin seeds
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon lemon juice (optional)
Roast the Eggplant
Wash and pat dry the eggplants. Prick them with a fork and coat them lightly with oil. Roast them directly over an open flame (stovetop) or in an oven at 400°F (200°C) for about 20-25 minutes until the skin is charred and the inside is soft. Once roasted, place them in a bowl and cover with a lid to let them steam for 5 minutes (this helps in peeling the skin easily). Remove the skin and mash the flesh using a fork or potato masher. Set aside.
Prepare the Masala
Heat oil in a pan on medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown. Add garlic, ginger, and green chilies, and cook for 1-2 minutes until fragrant. Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes become soft and oil starts separating from the mixture.
Cook the Baigan Bharta
Add the mashed eggplant to the pan and mix well. Cook on low-medium heat for 5-7 minutes, stirring occasionally to allow the flavors to blend. Add garam masala and mix well. Turn off the heat and sprinkle fresh cilantro and lemon juice.
