Ingredients (Serves 2)
- 500g potatoes (for fries)
- 500ml vegetable oil (for frying)

- 1 tsp soy sauce (optional, for the peanut sauce)
- ½ tsp sugar (optional, for balance)
- 1 tbsp water (to thin the sauce, if needed)
Prepare the Fries
Peel the potatoes (or leave the skin on for extra texture) and cut them into thick fries. Soak the cut potatoes in cold water for 30 minutes to remove excess starch. Drain and pat dry with a paper towel. Heat the vegetable oil in a deep pan or fryer to 160°C (320°F). Fry the potatoes in batches for 3-4 minutes until soft but not golden. Remove and drain. Increase the oil temperature to 180°C (350°F) and fry again for 2-3 minutes until golden brown and crispy. Remove from oil, drain on paper towels, and lightly season with salt.
Make the Peanut Satay Sauce
In a small saucepan, warm the peanut satay sauce over low heat. If too thick, add 1 tbsp water and stir until smooth. Optionally, add soy sauce and sugar for extra flavor balance. Heat until warm, then remove from the stove.
Assemble the Patatje Oorlog
Place the crispy fries in a serving dish or a paper cone. Drizzle mayonnaise generously over the fries. Pour warm peanut satay sauce on top. Sprinkle with finely chopped onions for crunch and sharpness. Serve immediately while the fries are hot and crispy!
