Easy Alheira de Mirandela Recipe for a Delicious Portuguese Meal

This delicious smoked sausage was originally created by Jewish communities in Portugal as a way to disguise their dietary restrictions during the Inquisition. Instead of pork, Alheira is made from a mixture of poultry, bread, garlic, and spices, giving it a unique smoky and slightly tangy flavor. Traditionally, it is grilled or fried and served with fried potatoes, a fried egg, and sometimes sautéed greens, making it a hearty and flavorful meal that showcases Portugal’s rich culinary history.
Ingredients (Serves 4)
- 4 Alheira de Mirandela sausages
- 4 eggs
- 4 medium potatoes, cut into fries
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon paprika (optional)
- 1 bunch of leafy greens (such as collard greens or kale), chopped
- 2 cloves garlic, minced
- 1 tablespoon vinegar
- Vegetable oil (for frying)
Preparing the Potatoes
Peel and cut the potatoes into fries or thick slices. Heat vegetable oil in a frying pan over medium-high heat. Fry the potatoes until golden brown and crispy, about 5–7 minutes. Remove and drain on paper towels. Sprinkle with salt and paprika for extra flavor.
Cooking the Alheira Sausages
Heat a non-stick pan over medium heat and add a small amount of olive oil. Carefully place the Alheira sausages in the pan without puncturing them, as they can easily break open due to their soft filling. Cook for about 4–5 minutes on each side until golden brown and slightly crispy on the outside. Remove from the pan and let them rest for a minute before serving.
Frying the Eggs
In the same pan, add a little more olive oil if needed. Crack the eggs into the pan and cook them sunny-side up until the whites are set but the yolks remain runny. Sprinkle with a pinch of salt and set aside.
Preparing the Greens
Heat olive oil in another pan and sauté the minced garlic until fragrant. Add the chopped greens and a splash of vinegar to enhance the flavor. Sauté for about 3–4 minutes until the greens are wilted but still vibrant.
Assembling the Dish
Place a portion of fried potatoes on each plate. Add the grilled Alheira sausage next to the potatoes. Carefully place a fried egg on top or to the side. Serve with a portion of sautéed greens for a well-balanced meal.
