Potato Borek Recipe

Step 1

Scrub potatoes well and remove any eyes. Place the potatoes in a pot filled with water and a pinch of salt and bring the water to a boil. Then reduce the heat and simmer the potatoes uncovered.

Step 2

Peel and coarsely chop the onion, put a pan on the heat and add two tablespoons of oil. Then sauté the onions in oil over medium heat until they get translucent.

Step 3

Add black pepper and salt to the chopped onions, then sauté until the aroma of the spices is released.

Step 4

Peel and grate the boiled potatoes in a mixing bowl. You can also mash the potatoes with a fork or a masher.

Step 5

Add the sautéed onions to the bowl containing potato and stir the ingredients until it is well combined.

Step 6

Place the Yufka sheet diagonal on your tray. Pile a layer of the ingredients on the sheets and a sprinkle of mozzarella and roll it. It will get an envelope shape. Brush milk and oil on the other side of the sheet so that it sticks together and the ingredients do not fall out. Then roll and tighten it until you hit the end.

Step 7

Place the Boreks into a preheated oven and bake them for 20 to 30 minutes until it is nice and golden brown. You can sauté them if there is no oven. Put a suitable pan on low heat and add some oil. You should heat the oil to 175 Celsius or 350 Fahrenheit degree. You can check the temperature by putting a chopstick on the oil. You have good heat if it fizzes up after about 5 to 10 seconds. When oil starts to heat, add your Boreks.

Step 8

Once it gets crispy and golden brown, put the pieces on a paper towel to dab off the excess oil. Your potato Borek is ready. Serve Borek with ketchup and enjoy it with your family and friends. Bon Appetit.
