Potato Croquettes Recipe
Step 1
Scrub potatoes well and remove any eyes and peel them. Chop them in a cubic manner in bite-size. Place the potatoes in a pot filled with water and a pinch of salt and bring the water to a boil. Then reduce the heat and simmer the potatoes uncovered.

Chop the ham and chives finely.

Mash the potatoes with a fork or a masher in a large mixing bowl.

Add salt, black pepper, garlic powder, thyme, and turmeric to the mashed potatoes. Then mix the ingredients well until they are combined.

Wet the palm of your hand, take a piece of the mashed potatoes, flatten it in your hand, and make a hole in it.

Place a sprinkle of mozzarella, chopped ham, and chopped chives and close it to make a small ball or a cone shape.

Crack the egg into a large mixing bowl. Then whisk it with a fork until well blended. Pour the bread crumbs into a second container.

Now sit the potato croquettes in the egg. Roll them in the egg and then toss them to coat in the bread crumbs.

Place the potato croquettes in a tray and freeze them for an hour. This will help them to firm up and not collapse when frying.

Then fill 3 centimeters of a pot with oil and put it on heat. You should heat the oil to 175 Celsius or 350 Fahrenheit degree. You can check the temperature by placing a chopstick on the oil, and if it fizzes up after about 5 to 10 seconds, the heat is good.

Sauté the croquettes for about 5 minutes until they are nicely golden brown and crispy on both sides. Then put them on a rack so they can drain the excess oil. There you have it. You can garnish them with some parsley leaves and serve them with your desired sauce. Enjoy your meal!
