Cutlet is among the most popular and delicious Persian dishes. Turkey Cutlets is a meatball made with turkey meat and potato and is usually served with bread. This delightful dish can be served as a main dish, appetizer, trip food, or cold sandwich.

Turkey Cutlets Recipe
Step 1
Scrub potatoes well and remove any eyes. Place the potatoes in a pot filled with water and a pinch of salt and bring the water to a boil. Then reduce the heat and simmer the potatoes uncovered for 45 minutes.

Cut the turkey meat into 5 centimeters chunks and grind them with a grinder. Then put the minced meat in the grinder again and grind it twice.

Peel the onions and boiled potatoes and grate them. You should drain the juice out of it. Then mix the drained onions and potatoes.

Add minced meat to them and mix them with your hand as much as possible.

Add turmeric, salt, black pepper, and red pepper to the meat. Then mix the ingredients well with your hands till they are combined and uniform.

Add egg to the mixture. The egg will make the cutlet ingredients stick together better and make them a little puffy and tender. Then mix the ingredients well with your hands till they are combined and uniform.

Cover the mix with a plastic film and let it sit in the fridge for an hour.

Put a suitable pan on low heat and add some oil. You should heat the oil to 175 Celsius or 350 Fahrenheit degree. You can check the temperature by placing a chopstick on the oil, and if it fizzes up after about 5 to 10 seconds, the heat is good.

Take a little bit of the mixture, about the size of a small tangerine, and shape it into a round or oval shape with your hands, then flatten it a little until it gets about 5 millimeters thick. Then roll it in the breadcrumbs to make it crunchy. Carefully lay it in the pan.
Step 9
Close the lid of the pan and sauté both sides of the cutlets. You should sauté each side for about 5 to 7 minutes on low heat until they are thoroughly cooked inside and crispy outside.
Step 10
Finally, after the cutlets are cooked, put them in a suitable dish. You can pour the sauce on the cutlets and serve this crispy and delicious turkey meatballs with bread, pickles, and lettuce. Enjoy your meal!
